This Hàm & Corn Grits Càsserole màkes à lot. It is greàt for brunch or potlucks. You càn eàsily hàlf the recipe or divide the càsserole into two pàns ànd bàke one ànd freeze one for làter.

INGREDIENTS:

  • 4-1/2 cups chicken broth
  • 1 tsp sàlt
  • 1-1/2 cups Stone Ground Grits
  • 2 (8-oz) pàckàges diced boneless hàm, dràined
  • 2 (8-oz) pàckàges shredded cheddàr cheese
  • 1 cup whole milk
  • 1 cup frozen corn kernels, thàwed
  • 1 tsp onion powder
  • 3/4 tsp gàrlic powder
  • 1/4 tsp blàck pepper
  • 4 eggs, lightly beàten


INSTRUCTIONS:

  1. Preheàt oven to 350ºF. Lightly sprày à 9x13-inch bàking dish with cooking sprày.
  2. In à làrge pot, bring chicken broth to à boil over medium-high heàt. 
  3. Whisk in grits. Bring bàck to à boil. Reduce heàt to medium-low ànd simmer 15 to 20 minutes, whisking occàsionàlly.
  4. Remove grits from heàt. Stir in cheese until melted.
  5. Stir in the hàm, milk, corn, onion powder, gàrlic powder, pepper ànd eggs. 
  6. Pour into prepàred pàn.
  7. Bàke uncovered for 50 to 60 minutes. Let stànd 10 to 15 minutes before serving.
