You probably already know how much I love quick 30 minute meals. If you are looking for some inspiration, you can check out my favorite One-Pan/One-Pot recipes. Working full time as an accountant and sometimes working overtime has taught me to be creative in the kitchen and to come up with quick & easy recipes. You can eat healthy homecooked meals even if you are short on time! You can come up with 10-15 quick & easy recipes and rotate them every 2 weeks. Fish has become one of my favorite go-to meals when I am short on time. Honey Sriracha Salmon - A super easy and flavorful salmon dish full of heart-healthy protein, vitamin A and omega-3 fatty acids!
- 4 salmon fillets
- salt and freshly ground black pepper, to taste
- sesame seeds, optional
- green onions, optional
- Marinade
- 4 Tbsp raw organic honey
- 2 Tbsp sriracha
- 1 1/2 Tbsp minced garlic
- 2 Tbsp white wine vinegar
- 1/2 tsp ground ginger
INSTRUCTIONS
- Preheat oven to 400 F.
- Mix marinade ingredients in a small bowl.
- Season salmon fillets with salt and pepper on both sides. Brush salmon with 2/3 of the marinade. If you have time you can let the salmon marinate in the fridge for at least 1 hour. If you don't have time, you can skip this step.
- Place salmon on a baking sheet lined with parchment paper, and bake at 400 F for about 12 - 14 minutes.
- After the salmon is done, brush the salmon fillets with the other 1/3 of the marinade. You can sprinkle some sesame seeds and green onions on top. Serve salmon warm over rice and a side of steamed vegetables.
